Century EggThis past Monday
was my father’s 4th year death anniversary. Vietnamese celebrates the deceased death date known as “gio”.
I went home to Houston, Texas for the weekend and celebrated “gio” with my mom and families.
I enjoyed myself
eating the Vietnamese feast! We had the standard Vietnamese food affair such as springrolls, egg rolls, duck soups, etc. However,
one dish stood out most that I would like to share. It was called the Century Egg or known as “Trung Bach Thao”
in Vietnamese. (yummy stuff) It is a Chinese cuisine made by preserving duck, chicken, or quail eggs in
a mixture of clay, ash, salt, lime, and rice hulls for several weeks to several months. Interested to know more? Click on
this link for more info: http://en.wikipedia.org/wiki/Century_egg I
am also submitting some pictures of this past weekend’s feast on facebook for your review: http://www.facebook.com/#!/pages/Pho-Queen-Cooking/176331282403610?v=wall Our demonstration events, fun food tips, and much more are now posted on facebook. We invite you to join us and RSVP

Kumquat Anyone?I learned a
new fruit from the participants at the last demonstration in Maitland – kumquat. Imagine that? =) I have heard about
this fruit before but never knew much until now. You can even eat the skin and it is delicious. Every January, there is a
Kumquat Festival in Dade City, FL: http://www.dadecitychamber.org/main/kumquat_festival.php About 40,000 people attend the festival each year. There are a lot
of kumquat trees in Vietnam. It is known as “Kim Quat” in Vietnamese. I came across a Vietnamese website that
talked about Kumquat for Vietnamese New Year, Tet. http://www.amchamvietnam.com/event/1260/detail. The Kumquat bonsai tree is used as decorations.
My mom said that eating kumquat helps sooth a sore throat. Any comments
or suggestions on how to make kumquat? Please visit http://www.facebook.com/home.php#!/board.php?uid=176331282403610 to add your two cents… Pho Queen Cooking is now on facebook: http://www.facebook.com/#!/pages/Pho-Queen-Cooking/176331282403610?v=wall Our demonstration events, fun food tips, and much much more are now posted on facebook. Valentine's Day is coming up!!!February is

Day with our love ones. Parties are great excuses to tantalize your taste buds with new food =). Give your love ones the gift
of cooking Vietnamese food -- Visit http://haroda.com/store/index.html for your gifts today. During the vegetarian cuisine demo, I shared with the class a special Vietnamese treat
only available during the New Year. It was “Banh Tet”. Banh Tet is known in the southern region of Vietnam while
Banh Chung is well known through the region of northern Vietnam. I also briefly shared the symbols and introduced a folk tale
about the cakes. Here is the link to the folk tale: http://www.chaobannewsletter.com/article-tetstory.html. Have you heard of Pho soup? In honor of the vegetarian demo, there is a vegetarian Pho recipe that I would like to
share with everyone. Thank you Michelle Sartor, our local certified health counselor, (http://bewellwithmichelle.com/) for the recipe posting from http://VegetarianTimes.com.
